The Legacy of Zacatlán
The name Zacatlán is rooted in the heritage of our chef, Eduardo Rodriguez. Born in Zacatecas, Mexico—whose name is often described as “the land where grass grows”—Chef Rodriguez drew inspiration from its Nahuatl translation, Zacatlán, meaning “land of abundant grass.” From this connection, the vision for Zacatlán Restaurant was born.
Chef Rodriguez arrived in Santa Fe as a teenager in 1994, beginning a journey that led him through some of the city’s most esteemed kitchens. Decades of dedication and craft culminated in the realization of his dream: opening his own restaurant. His work has not gone unnoticed—Zacatlán was named a James Beard Award semifinalist for Best New Restaurant in 2022, and in 2024, Chef Rodriguez himself earned a nomination for Best Chef: Southwest.
